Ina Garten Just Shared a Recipe From Her Next Cookbook, and We Can’t Wait to Try It

It’s been just shy of a year since Ina Garten quietly announced that she has another cookbook in the works by sharing a photo of a creamy piña colada on her Instagram. We’ve been glued to our screens ever since, salivating over every preview she’s dropped, including the dreamy Eton mess she just posted. If you’re wondering what that is and what other delicious recipes fans might be able to expect in her new cookbook, we’ve rounded up all the answers.

“Strawberries and rhubarb always say summer to me,” Ina shared on Instagram. “I want to include a strawberry and rhubarb Eton mess in my next book. I’ve tested it many different ways but serving it at a dinner party is always the final test (they loved it!).”

With Ina and her guests’ approval, you know the classic dessert is sure to be a hit—even if you’re not 100% sure what an Eton mess is.

Eton mess gets its name from Eton College in England, where it was purportedly first served at a royal garden party attended by Queen Victoria in 1893, before becoming a staple at the school’s annual cricket match. The Oxford Companion to Sugar and Sweets describes the quintessentially British dessert as featuring layers of broken meringue, whipped heavy cream and—traditionally—strawberries.

Over the past 100-plus years, Eton mess has been reinterpreted with a variety of flavors, including blueberry, raspberry and lemon. Now Ina has put her own spin on it by adding rhubarb to the mix. The delicately tart stalks of the vegetable are often used in desserts to balance the sweetness of the other ingredients, so we’re expecting Ina’s version will be undoubtedly elevated and have already bookmarked it in our minds.

Because we’ve counted at least three other recipes that Ina has hinted at as being possible contenders for her upcoming cookbook, it might be a good idea to start a hard list of all of our favorites that catch our eye, like the bananas foster that she showed off in all its flaming glory. She then served the dish over vanilla ice cream and topped it off with some orange zest, all while asking her fans for recipe recommendations. The Barefoot Contessa also shared a double sneak peek at two more recipes she tested—those recipes were breakfast panna cotta and smoked salmon dip, both of which sound utterly delicious to us. The breakfast panna cotta, in particular, looks incredible accompanied by fruits, nuts and granola.

We can already imagine ourselves enjoying all of these anticipated recipes, so we hope that it won’t be much longer before we can get our hands on a copy of her new cookbook. While her 2024 memoir, Be Ready When the Luck Happens, was released just six months after she announced it, we know that recipe development can be a long process from idea to the final product. Still, we have a good feeling that we might just be seeing it on bookshelves sooner rather than later. And judging by these recipe previews and the success of her past cookbooks, we know it will be well worth the wait.
