Happy National rotisserie chicken day! Rotisserie chicken is delicious on its own, but there’s so many recipes you can make from it. Esther Weisman from Mindins shares her recipe for her chicken salad. It is a fan favorite in her house and we hope you love it too!
The secret is shredding the chicken very fine so it has the consistency of tuna salad.
Chicken Salad:
INGREDIENTS ( servings very)
2 shredded chicken breast
2 T slivered almonds
2 T craisens
2T white onions minced fine
1T celery seed
Bunch of dill
pepper, salt only if needed
4 T dukes mayo
DIRECTIONS
1) Place chicken breasts in a food processor to chop fine.
2) Do the same with the onions.
3) Mix together with the rest of ingredients before adding the mayonnaise to incorporate all together.
4) Add the mayo and spices and blend well.
5) You can serve right away or refrigerate a few hours.
