This particular salad is a very nostalgic dish for all Australians during the summertime. You won’t find a barbecue where this salad isn’t on the table as a side dish. It is fresh, has satisfying crunch with the almonds and noodles, and is perfect for hot summer days.
The protein can be swapped for any protein you have to grill — sticky ribs, pork chops or even grilled fish. Wombok (Chinese cabbage) can be replaced with any variety of cabbage you like. If you can’t find that particular brand of noodles, you can bake any brand of instant ramen noodle (discard the flavor packet). Coat with a little vegetable oil and back for 10 minutes at 350 F and break them up. You can add more veggies too — carrot, radish and peppers all work well.
