Slow Cooker Shoyu Hawaiian Chicken Bowls
This recipe feels like a tropical summer vacation. It’s great for a fun weeknight meal or an easy, yet impressive way to entertain friends on a summer night. This tasty chicken with a bar of fresh summer fruits and veggies is not only colorful eye candy, but also a great nutritious boost. Everyone can design their bowl just the way they like it, making it a no stress evening for you!
Prep is 15 minutes
Ready in 6-8 hours on low (4 to 5 hours on high)
Serves 6 to 8
1 1/2 cups soy sauce
1 1/2 cups water
2 tablespoons Worcestershire sauce
1 tablespoon rice wine vinegar
1 cup granulated sugar
1/2 cup packed brown sugar
2-inch piece fresh ginger, peeled and grated
8 cloves fresh garlic, smashed, peeled, and chopped
⅛ teaspoon red pepper flakes
5 tablespoons cornstarch
3 pounds (12 thighs) boneless skinless chicken thighs
+ fresh fruits and veggies to make your bowl; suggestions: purple cabbage, pineapple, mango, carrots, scallions, cilantro and coconut rice (Calrose medium grain) of course!
Turn the slow cooker on low. Combine the soy sauce, water, Worcestershire, vinegar, granulated sugar, brown sugar, ginger, garlic, and red pepper flakes in the cooker. Whisk in the cornstarch until dissolved completely. Add the chicken thighs and cook for 8 hours on low (or for 4 to 5 hours on high).
Tips
Make the Calrose coconut rice according to package directions. Substitute half of the water requirement with canned coconut milk.
Set up a “shoyu hawaiian chicken” bar with coconut rice, fruits & veggies and let everyone make their own bowl.
The shredded chicken also makes for great sliders on Hawaiian rolls.
