GAINESVILLE, Fla. (WCJB) – This is a holiday weekend and you might be searching for a healthy alternative to the typical hotdogs and hamburgers.
Move over potatoes, because a new vegetable is getting rave reviews when it comes to being the new “it” party salad.
Ingredients
Dressing
- ¼ cup EVOO
- 3 T balsamic vinegar or lemon juice
- 1 tsp Dijon Mustard
- 2 Tbsp Shallots (garlic or onions can be substituted)
- ½ tsp kosher salt
- Tt black pepper
Salad
- 12 ounces Brussels sprouts. Thinly shaved
- ½ cup Italian Parsley, finely cut
- 1/3 cup Shaved parmesan cheese (this can be dairy free parmesan cheese)
- ½ cup Toasted hazel nuts (or toasted pecans, almonds, cashews)
- ½ cup Dried cherries ( or pomegranate seeds or cranberries)
- 1 each Small Honey Crisp apple, chopped
Optional
- Balsamic glaze for taste and appearance
- Small tomatoes for taste and a pop of color
Method of Preparation
- Combine EVOO, lemon juice, Dijon mustard, shallots, salt and pepper and whisk. You can also put the ingredients in a small jar and shake the jar to combine.
- Shave the Brussels sprouts with either knife or a mandolin (DO NOT FORGET TO USE A CUT SAFETY GLOVE).
- Cut thinly with a knife or use a food processor. Some store also sells them shaved but they are not as finely shaved as I like. To shred Brussels sprouts in a food processor, select the high-speed setting on your appliance. Place you Brussels Sprouts in the feed tube. Use the feed tube to press the Brussels sprouts into the blade.
- Drizzle the dressing over the shaved brussels sprouts and toss.
- Chop the Italian parsley, nuts and apple.
- Add the parsley, cheese, nuts, cherries and apple tossing lightly.
- Allow to marinate in the lemon vinaigrette until tender, 10 minutes worked for me,
- Serve as a flavorful and colorful side salad or top it with your favorite protein for a light wholesome meal. This salad will keep for several days.
Notes
Garnish with thin slices of the apple used in the recipe or with lemon twists. Top with shaved parmesan cheese.
