I make some version of a tomato Caesar salad every tomato season. Here, I inverted the usual proportions, going all in on the tomatoes with just a little romaine for crunch. This makes the juiciest of Caesars, with a touch of sweetness from ripe summer tomatoes.
Technique Tip: Using a mix of different colored tomatoes makes the prettiest salad.
Swap Option: If you’re not an anchovy person, simply leave them out. The salad is just as good without them.
