Katie Couric Tries the Viral Cottage Cheese Bagel Recipe

Written by

When you open Instagram, do you find yourself scrolling through cooking videos in hopes of gaining inspiration for fun new menu staples? You’re not alone — Katie loves plucking viral recipes from social media. In an effort to actually get cooking, she and her friend Kelly Rizzo have started a new video series called Is It As Good As It Looks?

In these witty and ultra-watchable tutorials, this dynamic duo tries their hand at the recipes currently dominating the internet. On the menu this week? Cottage cheese bagels — a protein-rich spin on the classic breakfast staple. This version calls for creamy cottage cheese to be mixed directly into the dough, which results in a light snack with minimal ingredients that comes together in under an hour. If you’ve ever made classic, notoriously time-consuming bagels from scratch, that probably sounds too good to be true — but we assure you, it’s the real deal.

Katie and Kelly used this simple recipe from blogger and culinary creator Erin Broege, whose tutorial is also a total treat. But our video has a surprise cameo from Molner, who pops in to deliver his opinion on whether or not this bagel is actually as good as it looks. Watch them in action below, and then read on to follow along with the recipe.

Cottage Cheese Bagels

Ingredients

Instructions

  1. Mix ingredients together.
  2. Brush with egg wash and bake at 375 degrees for 25-30 mins, until golden brown. This recipe should yield 4 medium sized bagels.
  3. Pro tip: You can use flour to knead the dough on your work surface if it’s too sticky (but beware that it might make the dough a bit too dry when it’s time to form the bagel).
