Smith’s Chef Jeff Jackson’s recipe for breakfast sammies for a crowd

Smith’s Chef Jeff Jackson joined KSL TV on Monday to show how to make his breakfast sammies.

Ingredients

  • 18 lg eggs
  • 1 c. milk
  • 2 tsp. salt
  • 1 tsp. pepper
  • 2-3 c. hot water
  • 12 English muffins
  • bacon as needed
  • Sausage patties as needed
  • Favorite sliced cheese as needed
  • Other favorite sandwich toppings as needed

Directions

  1. Preheat your oven to 325. Spray a 13×9 baking dish with nonstick spray.
  2. Whisk the eggs with the milk, salt, and pepper. Pour the mixture into the prepared baking dish. Place the dish on a baking sheet and carefully pour the hot water into the sheet pan to surround the baking dish.
  3. Place the whole thing in the oven to bake for 30-35 minutes or until the eggs set. As the eggs bake prepare the bacon, sausage, and any other sandwich toppings you like. Toast the English muffins.
  4. Take the eggs out of the oven and let cool for about 5 minutes. Cut the eggs into 12 squares. Build the sandwiches to your preference. Enjoy!
