These cheeky pops pack a punch of tropical flavor. Inspired by the Porn Star Martini, these boozy frozen ice poops combine passion fruit notes form nectar and liqueur; vanilla aromas from infused vodka and and a flavored simple syrup; and citrus notes from fresh lime and zippy sparkling wine.
The Porn Star Martini is an early 2000’s favorite that was invented by Douglas Ankrah in London in 2002. It popularized thanks to its memorable name and its crowd-pleasing combination of flavors.
These pops have a lower relative ABV (alcohol by volume) compared to the martini version so that they can freeze completely. To do this, additional passionfruit nectar (we like Ceres) is used and less vanilla vodka is included. Though, while the Porn Star Martini is typically served with a sidecar of sparkling wine, this frozen pop version incorporates the sparkling wine into the mix.
Tips for making Porn Star Martini Pops
Use a dry, citrusy sparkling wine to balance out the sweet notes from the vanilla simple syrup and passionfruit liqueur. We like Prosecco for this due to its light and bright flavor profile. To ease the freezing process, strain out any pulp from the lime juice to keep the mixture smooth and homogenous.
Homemade or store-bought vanilla simple syrup can be used here. To make it: Bring 1 cup granulated sugar and 1 cup water to a boil over medium-high, stirring to dissolve sugar. Reduce heat to medium-low, and simmer for about 20 minutes. Turn off heat and add a split vanilla bean and let cool completely. Remove bean before using.
Due to the alcohol, these pops will freeze to an icy consistency that is easy to bite through. For the best results, freeze for at least 12 hours before unmolding.
