Chicago chef serves up ‘Proper Burger’ ahead of Labor Day weekend

CHICAGO (WLS) — Just in time for the Labor Day holiday, Chicago chef Bob Broskey is sharing his recipe for what he calls the “Proper Burger.”

Broskey, executive chef partner at Gus’ Sip & Dip in River North, joined ABC7 Chicago on Friday morning for a live cooking demo. The burger, featured on Gus’ menu, is made with prime chuck ground fresh daily and topped with five-year aged Wisconsin cheddar on a toasted pumpernickel bun.

A Pittsburgh native who has cooked at Michelin-starred Chicago restaurants and RPM concepts nationwide, Broskey said his tips for grilling at home include keeping it simple and letting quality ingredients shine.

Gus’ Sip & Dip opened in late 2024, offering tavern-style food and a cocktail program led by beverage director Kevin Beary. The restaurant is walk-in only and open late, with dishes ranging from French dip sandwiches to shrimp cocktail.
