Recipe below:

Homemade Bacon Cheeseburger

What You’ll Need

  • 1 burger bun (lightly toasted)
  • 2 x 100g premium beef mince patties (from your local butcher)
  • 2 slices American cheddar cheese
  • 2 rashers streaky bacon
  • 1 tbsp caramelised onions (see recipe below)
  • 1 tbsp tomato ketchup
  • ¼ tsp yellow mustard
  • 3 slices dill pickles
  • Salt & pepper

Caramelised Onions

Ingredients:

  • 1 medium onion, finely diced
  • ½ tsp salt
  • 1 tbsp butter
  • ½ tbsp olive oil
  • Splash of water

Method:

  1. Add onion and salt to a small pot over low heat. Stir for 2 minutes until the onions release some liquid.
  2. Keep cooking for 5 minutes, until the liquid has mostly evaporated.
  3. Add butter and olive oil. Stir and cook for 5–7 minutes until onions are soft and translucent.
  4. If the onions start sticking, add a small splash of water. Cook until golden and jammy. Set aside.

Cooking the Burger

  1. Heat a frying pan to medium heat.
  2. Cook bacon for about 1½ minutes per side until crispy. Remove and set aside.
  3. In the same pan, cook the beef patties. Season with salt and pepper.
  4. Place a slice of cheese on each patty, remove from heat, and let it melt gently.

Building Your Burger

  1. Place both cheesy beef patties on the bottom half of the toasted bun.
  2. Spoon on the caramelised onions.
  3. Add the crispy bacon.
  4. On the top bun, spread ketchup and mustard, then add the pickles.
  5. Close the burger, take a big bite, and enjoy!

Loaded Fries with Cheese Sauce & Bacon

What You’ll Need

  • 500g frozen fries (of your choice)
  • 2 rashers streaky bacon, diced
  • 1 cup grated cheddar cheese
  • ¼ cup water (add more if needed)

Quick Cheese Sauce (Microwave)

  1. In a microwave-safe bowl, add grated cheddar and water.
  2. Microwave in 30-second bursts, stirring each time, until smooth and melted (about 1–2 mins).
  3. If too thick, stir in a splash more water.

Bacon

  1. Dice bacon into small pieces.
  2. Fry in a pan until crispy.

Fries

  1. Cook fries according to packet instructions (oven or air fryer).
  2. Place hot fries on a plate.
  3. Pour over warm cheese sauce.
  4. Sprinkle crispy bacon on top.
  5. Serve and dig in!
