Pig Ate My Pizza is set to open a new location in Bloomington, expanding from its origins in Robbinsdale.
BLOOMINGTON, Minn. — It began as a quirky pizza restaurant with a cult following in 2013 in Robbinsdale, and now it’s back with the team from Nouvelle Brewing.
Next month, another Pig Ate My Pizza location is set to open its doors in Bloomington.
Chef and Owner Mike Brown, along with Head Brewer of Nouvelle Brewing, Andy Goettsch, shared foods and drinks you can expect at the restaurant with KARE 11 Saturday.
RECIPE: Lumache alla Vodka
- 1 T olive oil
- ½ clove garlic – thinly sliced
- Pinch chili flakes
- 4oz vodka
- 3oz Italian sausage – cooked
- 4oz San Marzano tomato – pureed
- 2oz heavy cream
- Pinch sugar
- 1 T butter
- ½ c. finely grated parmesan reggiano
- Salt TT
- 6oz Lumache pasta
For honey ricotta: Mix together
1. Bring 5qt of salted water to a boil – add the pasta to the water
2. Heat a saute pan over medium heat. Add oil, chili flake and garlic and toast until lightly brown.
3. Carefully add vodka, reduce by half
4. Add sausage and tomato and simmer for 1-2 minutes
5. Add cream, butter and salt – stir and simmer for 1-2 minutes
6. When pasta is almost al dente, add it to the sauce and simmer, stirring constantly for 1 minute to finish cooking.
7. Remove from heat, add cheese and toss to melt and combine. Season with salt to taste.
8. Spoon into your favorite pasta bowl, add a dollop of honey ricotta and cover with freshly grated parmesan reggiano.
