This lemongrass marinade is one of my personal favorites because it’s timeless and so versatile. You can use it for any type of protein or vegetable and it’s a good foundational base to build upon. There are so many layers of flavors and aromatics that go into it — you’ve got sweet, savory, a little kick of spice, tart and tangy.
Technique tip: Marinate the chicken for 6 to 8 hours or overnight, but no more than 24 hours.
