Recipe of Creamy Poblano Chicken Pasta
Ingredients

- 1 (8oz) pack of PHILADELPHIA Original Cream Cheese, room temp
- 3-4 chiles poblanos
- 2-3 chiles serranos
- 1/2 cup Mexican table cream (crema)
- 2 Tbsp chicken-flavored bouillon
- 1/2 onion
- 2 cloves of garlic
- 1/2 bunch of cilantro
- 16oz Fettuccine pasta
- 1.5 lb thin-sliced chicken breast
- Salt, pepper, and garlic powder for chicken seasoning
Preparation
1- Roast the poblanos on a comal or dry skillet until the skins are blistered and charred. Then place them in a bowl, cover with a plate or plastic wrap, and let them steam for 10 minutes. Peel off the skin, remove the stems and seeds, and set aside.

2- Blend the sauce: In a blender, combine the roasted poblanos, 1 (8 oz) pack of PHILADELPHIA Cream Cheese, 1 cup of Mexican table cream (crema), 2 tablespoons chicken-flavored bouillon, 1/2 onion, 2 garlic cloves, and 1/2 bunch of fresh cilantro. Blend until smooth and creamy. The sauce should have a beautiful light green color.

3- Cook the pasta according to the package instructions. Drain and set aside.
4- Season the chicken with salt, pepper, and garlic powder.

5- Cook the chicken: Heat a bit of olive oil in a skillet over medium-high heat. Cook the chicken until fully cooked and golden on the outside. Then slice into thin strips.
6- Warm the poblano sauce: Pour the blended sauce into a large pan over medium-low heat. Stir occasionally and let it simmer gently for 8–10 minutes.
7- Combine pasta and sauce: Add the cooked pasta to the pan with the sauce. Mix well to coat all the noodles.

8- Serve: Plate the creamy poblano pasta and top with sliced chicken. Garnish with extra cilantro if desired.
