You may know her as LilyLouTay from her popular site. But Hannah Taylor has released her first cookbook, Measure With Your Heart and we are here for all of it. I think many families have a version of this comforting dish and Hannah’s version doesn’t disappoint. Hannah Taylor’s Chicken & Rice Casserole recipe is studded with white meat chicken and fresh broccoli. It comes together with a few fresh ingredients plus a handful  pantry staples. Personally, I love this kind of recipe for when I pick up a rotisserie chicken. I’ll use half the chicken for a dish like this and the rest for one of these ideas.

Ingredients

  • 12 oz. cooked chicken (boiled, pan-seared, or rotisserie—I’ve tried them all and they are all good)

  • 2 cups shredded cheddar (8 oz.)

  • 1/2 cup (4 oz.) cream cheese, at room temp.

  • All-purpose seasoning, like Everglades

Instructions

Preheat your oven to 350°F. While that’s happening, cook the 2 cups yellow rice according to the directions on the package. Shred chicken so you get 2 cups. Chop up broccoli into real small pieces (you should have 2 cups or so).

In a large bowl, combine cooked rice, chicken, broccoli, chicken broth, 1 cup shredded Cheddar, cream cheese, a couple pinches each of onion powder and all-purpose seasoning and a pinch each of garlic salt, black pepper, and cayenne pepper. Mix it all together and make sure you’re happy with the seasoning. Put your mixture into a 9 × 13-inch baking dish, then sprinkle the other 1 cup shredded Cheddar cheese on top. Cover the baking dish with foil.

Bake for 20 min., then take off the foil and continue baking until the broccoli is tender, the liquid is gone and the cheese is browned, another 20 minutes or so. Let it rest for 5 minutes before you dish it up. Is that not the best dang casserole you’ve ever had?
