Summer is saved by The Pioneer Woman! The chef and lifestyle guru (whose real name is Ree Drummond) just gave us the summer dessert recipe we didn’t know we needed, which is the perfect mix of nostalgic and fresh for the season.
It looks like a pie but tastes like a root beer float: Drummond’s delicious dessert is a combo of both! “Root beer float pie is the best thing to happen to summer. 🤩🥤🥧,” Drummond captioned a photo of the decadent-looking pie on Instagram. This root beer float pie is “the ultimate throwback summer treat,” according to Drummond, and it’s not too difficult to make either. For the crust, you’ll just combine graham crackers and a few other ingredients into a food processor, which will serve as the crust of the pie.
Now it’s time for the filling, which you’ll whip up in the bowl of a stand mixer. Whip heavy cream and powdered sugar with the stand mixer, then hand-whisk root beer, vanilla pudding mix, and other ingredients in a large bowl. Fold 2 cups of the whipped cream into the pie filling. Pour it on the pie crust, then add the rest of the whipped cream on top. Add a few maraschino cherries on top and chill for 2-6 hours before serving.
Each bite of this “creamy, dreamy pie” is like a little taste of heaven in your mouth. And the fact that it’s chilled instead of warmed in these hot summer months is just *chef’s kiss.* Because who wants to turn on the oven in the middle of summer?
