If there’s one thing you should know about me, it’s that I go hard for a good TikTok food trend. So when Cassie Yeung’s carrot ribbon salad video crossed my FYP back in April, I knew I had to try it, and honestly, I haven’t been able to stop making it since. With 19.7 million views, I’m not alone in this carrot ribbon salad madness.

It’s such a simple salad, but the flavors are so bold and bright, and the crunchy texture makes you think you’re eating something closer to a potato chip than a salad. I recently made a version of this recipe for a summer BBQ, and it was the hit of the gathering. My friends raved about it, and I have never had so many people ask me for a salad recipe before.

It’s also ridiculously easy to prepare but somehow feels elevated and fancy. Like a side dish you might have ordered at Ina Garten’s Barefoot Contessa specialty food store back in the ’90s. All you need is a vegetable peeler (I love this one) to make the sophisticated-looking ribbons, and the whole process is oddly satisfying. For my twist on the classic recipe, I added some cucumbers because they’re growing like crazy in my garden right now, and I ribboned those to match the carrots. Then just slice some red onions and chop some green onions, maybe some grated garlic if you have it, and you’re almost done.

The dressing is the magic part that ties in all of the ingredients. I didn’t measure anything and just poured the ingredients right over the top of the ribboned and sliced veggies. I used sesame oil, rice wine vinegar, soy sauce, garlic powder, and chili flakes for mine because that’s what I had on hand. You could also play around with the flavors by adding things like honey, mirin, peanut butter, chili oil, sriracha, hoisin, or even some yuzu for a bit of citrus.

While everyone else is bringing the same old pasta or potato salad to summer potlucks, show up with this vibrant, crunchy masterpiece and you’ll be the star of any summer get-together. Trust me, make this once and you’ll understand the hype. Sometimes the algorithm really does know exactly what we need.
