Peachy Barbecue Chicken Skewers

Serves: 4-6

Ingredients:

1 cup puréed peaches

1/2 cup honey

1/4 cup bourbon or water

2 tsp whole grain mustard

2 tsp chili powder

1 tsp bourbon smoked paprika

1 tsp sea salt

1/2 tsp onion powder

1/2 tsp garlic powder

1/4 tsp cracked black pepper

2 lbs boneless skinless chicken breasts, cut into 2” chunks

Preparation:

In a medium pot, combine peach purée, honey, water, mustard, chili powder, paprika, salt, onion powder, garlic powder, and black pepper. Turn heat to medium high and simmer for 25 minutes, or until sauce is thickened stirring occasionally to prevent sticking.

Transfer 1/2 cup of prepared sauce to a large bowl. Add chicken and toss to coat each piece.

Preheat grill to medium high heat. Wipe grates prior to heating with an oil meant for high heat cooking. A grill pan can be used on a stove top too. If using a grill pan, wipe it with oil, or spray with a non stick cooking spray then preheat to medium high.

Skewer chunks using 6”-8” skewers. If they are bamboo, soak in warm water first for about an hour.

Grill skewers for approximately 12 minutes or until chicken has cooked through and edges are lightly charred. If using a thermometer, internal temperature will be 165 degrees. If using a grill pan depending on surface of pan, it may be necessary to grill in batches. Keep grilled skewers warm in a 180 degree oven u til all are grilled.

Serve with grilled vegetables, or a chopped salad.

Store leftovers in a covered container.
