Planning on grilling hamburgers this weekend? It’s a summer tradition, after all! The meat is the easy part — it’s figuring out what to serve as a side dish that can be so complicated. There’s nothing wrong with watermelon slices and chips, of course, but if you want to mix it up, Martha Stewart just shared a recipe for the “perfect summer side dish.” It’s refreshing, full of flavor, and only requires four ingredients to whip up!
The chef and lifestyle guru shared the recipe for her Cucumber Salad with Dill and Sour Cream on Instagram this week, and we’re obsessed. She shared a photo of the chopped cucumber dish, which she called “the perfect creamy summer side dish.” Stewart continued, “It pairs just as well with your lunchtime sandwich as it does is a grilled dinner. We particularly love it with burgers, ribs, or grilled salmon.”
You can make this salad with any type of cucumber, but Stewart recommends using Kirby cucumbers, which have crisp flesh and thin skins that don’t require peeling. (If you use English cucumbers or slicing cucumbers, just scoop out some of the seeds first and consider peeling.)
Prepare the salad by whisking sour cream, dill, and more ingredients in a bowl. Then, add the chopped cucumbers to the bowl and toss, coating the cucumbers with the dressing. It’s that easy! You can either serve immediately or refrigerate, covered, for up to four hours (for best results).
