2 cups shredded chicken
1/2 cup greek yogurt
1/4 cup creamy peanut butter
1/4 cup soy sauce
2 tbsp rice vinegar
1 tbsp maple syrup (optional)
2 tsp sesame oil
1/2 tsp ginger & garlic powder
1 tsp chili oil
A few splahes of water to thin it out (optional)
1 pack of prepackaged coleslaw
Directions:
- Shred Chicken, rotisserie or boil 2 chicken breats for 25 minutes
- In large bowls combine the dressing ingredients
- Add chicken & coleslaw, chop finely
- Add onion and nuts
- Store in containers for up to 5 days
