When making a fruit-based salsa, it’s important to make sure that it doesn’t veer into dessert territory. That means balancing the sweetness with the right amount of heat, acid, and savory notes, like in this Peach Salsa. The base of the recipe is peaches and cherry tomatoes, which are both naturally sweet. So we add a good amount of chopped red onion, serrano chile, fresh cilantro, lime zest and juice, and chili powder. (You can use chili or chile powder—the former typically has ingredients like garlic powder and cumin, which will add an extra savory flavor. The latter is just ground dried chiles.)
The recipe also calls for 1 teaspoon of salt, which helps bring all the ingredients together and helps the peaches and tomatoes release their juices. Letting the salsa stand for 5 minutes before you serve it allows the fruit to break down a bit.
