WISCONSIN DELLS, Wis. — As summer draws to a close, Wisconsin Brew Pub at Kalahari Resorts continues to celebrate the season’s bold flavors with its featured “Hot as August Burger” special, showcasing fresh ingredients and spicy elements designed to capture the essence of late-summer dining.

Chef Roberto, representing the resort’s culinary team, highlighted the specialty burger’s unique construction on News 3 Now this morning that viewers can try at home. The featured item centers around a brisket blend patty that provides enhanced flavor and texture compared to traditional ground beef options.

“We’re running our Hot as August Burger special,” Chef Roberto said. “We want something fresh, a little bit of kick to it. So our signature burger for this month we’re going to have is a brisket blend. You’re going to have a little of that fattiness. Really nice, bite to it and chew.”

The burger features pepper jack cheese and is topped with the restaurant’s distinctive pico de gallo, which differs from traditional preparations found at other establishments. Instead of cilantro, Wisconsin Brew Pub finishes their pico de gallo with green onions, creating a unique flavor profile while accommodating diners who may be sensitive to cilantro.

“Our pico is a little bit different from our common pico de gallo,” Chef Roberto explained. “Our pico is finished with green onions instead of cilantro. We think a little bit about everybody.”

The burger construction includes red onions for freshness and pickled jalapeños to provide the signature “kick” that gives the burger its name. The combination creates a balance of fresh, acidic and spicy elements designed to appeal to diners seeking bold flavors without overwhelming heat.

“What we’re looking here in this burger basically is we want something fresh. Not too heavy. Have a little bit of kick, a little bit of acidity. With the pickled jalapeños as well,” Chef Roberto said.

The burger is served on a brioche bun, which Chef Roberto considers the optimal choice for burger service. The restaurant finishes each burger with their signature “brew pub sauce,” a proprietary blend combining mayonnaise, ketchup, pickles and additional spices that appears on all their burger offerings.

“Brioche buns is for me is the best burger that the best burger bun that we can utilize,” Chef Roberto said. “We’re finishing of course, with our brew pub sauce is basically a mayo, ketchup, pickles and some other spices is our signature sauce. We use it for all the burgers.”

Beyond the featured burger, Wisconsin Brewpub maintains a shake menu that reflects current trends. The restaurant recently introduced a Dubai chocolate shake, demonstrating their commitment to incorporating popular culinary trends into their offerings.

“We always try to keep up. You know, see what’s new, what’s hot and what’s going on,” Chef Roberto said. 

The Wisconsin Brew Pub represents one component of Kalahari Resort’s extensive dining program, which encompasses multiple award-winning restaurants and diverse culinary options. The resort’s food and beverage operations include Double Cut Steakhouse, an award-winning establishment, alongside Italian cuisine at Sortino’s, Mexican options, pizza, quick-service items and fried chicken.

“Kalahari is very big in food and beverage. We have a plethora of options for our guests right there at Kalahari,” Chef Roberto said.
