I love this dish for all its textures and brightness. No matter the season or meal, it’s always nice to start off with something light, bright and crispy, and this salad is just that! The young papaya and pickled carrots and daikon have such a great crunch and go really well with mint, basil and Vietnamese herbs. I love that it does not get soggy from the dressing, and the sesame rice cracker gives you that crouton crunch and can be used as a vehicle to scoop everything up!
